GSSJC Thinks Outside the Box, Shares Favorite Girl Scout Cookie Recipes

HOUSTON (March 5, 2010) – It’s “crunch time” for Girl Scout cookie lovers who, at this very moment, are lining their pantries with boxes of cookies and packing their freezers with sleeves of Thin Mints.

Girl Scouts of San Jacinto Council’s annual Cookie Sale kicked off locally on January 9 and continues through March 27, giving customers a few more weeks to stock up on their favorite Girl Scout cookies for the rest of the year. Once the sale is over, many are faced with the Collective Cookie Conundrum. What am I going to do with all those Girl Scout cookies?

Before assuming Girl Scout cookies are just for snacks, try thinking outside the box! Take a look at some of these tasty dessert recipes that include Girl Scout cookies as the not-so-secret ingredient.

Chocolate Thin Mint Pizza Supreme

  • ½ box (19 cookies) Thin Mint Girl Scout Cookies
  • 1 pkg (18 oz) refrigerated chocolate chip cookie dough
  • ½ cup white chocolate morsels
  • Vanilla ice cream, optional

Press cookie dough evenly in the bottom of an ungreased 12-inch pizza pan or a 9x13 baking pan. (Dough will barely cover the pan.) Break Thin Mints into halves or thirds. Press cookie pieces into dough, covering evenly. Bake at 350 F for 12-18 minutes or until golden brown.

Melt white chocolate morsels in microwave on medium high for 40-50 seconds or until melted. Drizzle over top of pizza. When cool, cut pizza into 8-10 wedges. If desired top each serving with a scoop of ice cream. Makes 8-10 servings.

Girl Scout Peanut Butter Pattie Fudge

  • ½ cup butter or margarine
  • 1/3 cup water
  • 16 oz. package (4 cups) powdered sugar
  • ½ nonfat dry milk powder
  • ½ cup unsweetened coca powder
  • ½ cup chopped nuts
  • ½ box Peanut Butter Patties, crumbled (fine)

In a sauce pan bring butter and water to a boil, stirring to melt butter. Sift together powdered sugar, dry milk powder and cocoa powder. If mixture is lumpy, sift again. Add the butter mixture; stir until well combined. Stir in nuts and crumbled cookies. Turn into a buttered 8 x 8 pan. Cover and chill several hours or until firm. Cut into squares. Makes 1 ½ pounds of candy.
